Pork Fried Rice

Pork Fried Rice

4-6 pork chops
1/2 c finely chopped carrots- I buy the slices in a can and then I chop them.
1/4 c chopped fresh broccoli- we always add about a cup
1/4 c frozen peas
1 TBS butter
1 egg, beaten- I add 3 eggs
3 c cooked brown/white rice
soy sauce
1/8 tsp garlic powder
Extra virgin olive oil (EVOO)



Before cooking, cube the pork into small bite size pieces. Saute the pork, broccoli, and peas until the pork is no longer pink. Add the precooked (soft) carrots. Remove everything from the pan and set it aside. In the same skillet, cook and stir eggs over medium heat. I add water to my eggs to make them fluffy and then wisk them to make them fluffy. Once cooked stir in the rice, soy sauce, garlic powder and pork mixture; heat through.
