Mint Brownie Bars

Mint Brownie Bars

Cook your favorite fudge brownies in a 9x13 pan.  Set aside to cool.

For mint filling:
6 T. margarine
4 T. milk
2 c. powdered sugar
½ tsp. peppermint extract
dash of green food coloring

Mix together on high with electric mixer until smooth. Spread on cooled brownies, refrigerate for ½ hour.

Chocolate topping:
1 c. chocolate chips
4 T. butter or margarine

Melt in microwave (according to instructions on the bag of chocolate chips)

Spread on top of mint icing, refrigerate for at least 15 minutes.

A few sisters have told me how much they really like these, so I thought I'd post the recipe though it isn't what I brought to our pot luck!
