Pesto Turkey (or chicken) and Pasta
Serves 8
12 oz uncooked farfalle (bow-tie) pasta - or what ever you want, really.
3 cups cubed turkey or chicken breast
1 cup pesto
1 med Red bell pepper or about 1 cup chopped into slices or small cubes
Cook pasta as directed. Drain.
While pasta is cooking, Brown turkey or chicken in a medium pan with a tablespoon or so, of olive oil. Then add and saute bell pepper, just until browned a bit.
Once everything is cooked toss together in a large serving bowl. Add pesto and mix.
Slice up some black olives to garnish.
