Stuffed French Toast

A twist on French toast; adults and kids alike enjoy this recipe; strawberries would be a good substitute for the bananas.

8 slices of bread
2 bananas, peeled and sliced
3 eggs, beaten
1/4 c milk
1 tsp vanilla extract
1/4 c butter
confectioners' sugar for dusting

In a medium bowl, beat together eggs, milk, and vanilla extract. dip the bread slices in the mixture, allowing slices to become saturated. Melt butter in a medium skillet over medium heat. Place a few slices at a time in the skillet, top with banana slices and another piece of bread. Cook, turning once, until both sides are golden brown. Press bread down with the back of a spatula while cooking so the mixture sticks together. Dust with confectioners' sugar.
